pineapple upside down cake from scratch so easy !

this is such a easy recipe and soooo good !



Topping ingredients needed:
1/4 cup butter/ margarine
1/2 cup light brown sugar
1 large can pineapple rings , well drained
 maraschino cherries or candied dry ones - (I like a lot on mine if not around 6 will be fine )



Batter ingredients needed :
2 large eggs
1/3 cup vegetable oil
1 cup sugar
1/2 cup milk- (* I use 1 % and that was fine*)
2 teaspoons vanilla


1 1/2 cups all-purpose flour **Mixed with **( 2 1/4 teaspoons baking powder and 1/2 teaspoon salt.) mix in a seperate in a small bowl ,set aside


Preheat your oven to 350 F.
The pineapple topping for the bottom of the pan:
Melt ( 1/4 butter/margerine) then pour it in a 8 x8 , 9-inch square or round cake pan.
Sprinkle the brown sugar over the butter( 1/2 cup),
place a with a layer of drained pineapple on top of brown sugar.
place the cherries inside of pineapples and anywhere else you may decide.
 ^ set aside :) 

next start pre-paring the batter:
In a medium-sized bowl, beat the 2 eggs until very light.
While still beating, slowly add the 1/3 cup vegetable oil,
then the 1 cup sugar.
Blend in the 1/2 cup milk and 2 teaspoons vanilla,
then mix in the *flour mix* just until blended.-( do not over mix when adding the flour)
**(1 1/2 cups flour & 2  1/4 teaspoon baking powder,1/2 teaspoon salt pre-mixed in seperate bowl)**





Pour the batter over the pineapple topping
Bake in the preheated oven 350 F for 40 to 45 minutes,
(or until the center springs back when gently pressed "or" a cake tester comes out clean)
Cool the cake in the pan for approx. 10 minutes, then (invert/ flip upside down) cake pan onto a plate or dish
